The Story
Dutch King William of Orange introduced gin to Londoners during his reign in the late 17th century. The King’s orders were to liberalise the production of gin, and so the rapid expansion of small, artisanal distillers spurred Londoners’ near-obsessive love affair.

30ml Lime Juice
15ml Sugar
Mint
Top soda for Rickey.
METHOD
Shake all ingredients in Boston tin, traditionally double strained into a martini, garnish with pegged mint sprig. For a gin Rickey strain over ice into Collins and top with soda.
