Without juniper, there is no gin.
When distilled, it adds a medicinal
flavour with notes of pine needles.
Juniper is grown wild, and the berries
are harvested by hand on mountain
slopes.

These dried pink peppercorns are
not harvested from the pepper vine,
but come from a “Shinus” species of
tree. These peppercorns have a
pine-like flavour which resembles
Juniper, and different from true
Pink Pepper.

The almond is more closely related
to peaches than other nuts. The
flavor of almond in gin, albeit subtle,
calls to mind the creamy, slightly
vanilla tinged exotic flavor.

Although often used in fragrances
and cosmetics, orris is one of the
essential ingredients in gin.

We just use a sprinkle, but this
sweet and musky natural flavour
compliments the zest and
reduces that peppery kick.

The Story
As legend has it, Captain Shaddock brought the first seeds of the pink pomelo to Caribbean plant orchards during the mid-17th century. One of the earliest references to the exotic grapefruit was in the middle of the eighteenth century when an English writer described the “Forbidden fruit Tree” as growing in the Island of Barbados.
The pink pomelo lends a juicy kick to our signature gin and is as enticing as its name suggests, like all things forbidden.
