100 Years Of History
Auguste de Bavay
Was a Belgium-born industrial chemist and founding father of Australian brewing and spirits production. Renowned for his discovery of Australia’s first pure strain of wild yeast, de Bavay’s most notable contribution however was creating a process of distilling molasses to produce acetate of lime for cordite which contributed to Australian self-sufficiency in ammunition manufacturing.
This discovery led to de Bavay designing and building the Commonwealth Acetate of Lime Factory where, roughly 100 years later, his dedication to distilling has paved the way for us to produce a range of small batch spirits that excite, and inspire drinkers by honouring the traditions of spirit making from around the world.
The Original Stillhouse
Operating from the factory’s original 1920’s Stillhouse, the makers behind Bavay Distillery are excited to add yet another chapter to the long and distinguished history of their new home and continue sharing in the stories of distilling made famous by Dr Auguste de Bavay.
