Auguste de Bavay
Was a Belgium-born industrial chemist and founding father of Australian brewing and spirits production. Renowned for his discovery of Australia’s first pure strain of wild yeast, de Bavay’s most notable contribution however was creating a process of distilling molasses to produce acetate of lime for cordite which contributed to Australian self-sufficiency in ammunition manufacturing.

With 10 years in hospitality, starting from humble beginnings as a glassy, the head distiller at Bavay Spirits has honed his craft through curiosity, experimentation, and self-taught expertise. Embracing traditional distilling methods, Bavay Spirits uses a 500L copper pot still and column distillation to create unique, full-bodied spirits. Their meticulous process, natural ingredients, long ferments, and resting times, ensures high-quality products, like the acclaimed Spice Trade and Forbidden Fruit Gin
The distiller’s favorite, the Umami Daiquiri, highlights Bavay's creativity, pairing house-made falernum, kaffir lime, and wasabi with their white rum. For newcomers, the London Dry Gin offers a perfect introduction. Bavay Spirits invites patrons to experience the process firsthand and even create their own blends, celebrating patience, unique botanicals, and Australia’s rich resources.
